
This easy Christmas Pudding Flapjack is ready in just 25 minutes and makes a wonderfully rich, festive holiday treat. It combines the warm spiced flavors of traditional British Christmas pudding with the chewy, buttery comfort of a classic oat flapjack. Perfect for using up leftover mincemeat or dried fruits during the winter season.
Preheat your oven to 180°C (350°F) and grease and line an 8-inch square baking tin with parchment paper.
In a large saucepan, melt the unsalted butter, light brown sugar, and golden syrup over low heat until the sugar has completely dissolved and the mixture is smooth.
Remove the saucepan from the heat, then stir in the rolled oats, crumbled Christmas pudding, ground mixed spice, and fresh orange zest until everything is thoroughly coated in the buttery syrup.
Tip the mixture into your prepared baking tin and press it down firmly and evenly using the back of a metal spoon to ensure the flapjacks hold together after baking.
Bake in the preheated oven for 20 to 25 minutes, or until the edges are golden brown and bubbling slightly while the center remains slightly soft.
Remove from the oven, let it cool in the tin for 10 minutes, then score into 8 squares and let them cool completely before serving alongside a warm cup of spiced tea.
