This recipe elevates the classic melt-in-your-mouth texture of a Krispy Kreme donut by infusing the fluffy yeast dough with aromatic cardamom. Finished with a crackly glaze speckled with real vanilla bean, these donuts offer a sophisticated twist on the beloved original while retaining that iconic airy lightness.
In a small bowl, combine the warm milk and 1 teaspoon of the sugar. Sprinkle the yeast on top and let it sit for 5-10 minutes until foamy.
In a large mixing bowl (or stand mixer), combine the remaining sugar, flour, ground cardamom, and salt.
Add the yeast mixture, melted butter, and egg to the dry ingredients. Mix until a soft, sticky dough forms.
Knead the dough on a floured surface or with a dough hook for about 5-7 minutes until it becomes smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
Punch down the dough and roll it out on a floured surface to about 1/2-inch thickness.
Cut out donuts using a donut cutter or two round biscuit cutters (one large, one small for the hole). Place cut donuts on a parchment-lined baking sheet.
Cover the donuts loosely and let them rise again for 30 minutes until puffy.
Heat about 2 inches of vegetable oil in a heavy-bottomed pot to 350°F (175°C).
While oil heats, whisk together powdered sugar, 1/3 cup milk, and vanilla bean paste in a bowl until smooth to create the glaze.
Fry the donuts in batches, about 1 minute per side, until light golden brown. Do not overcrowd the pot.
Remove donuts with a slotted spoon and drain briefly on a wire rack or paper towels.
While the donuts are still warm, dip them fully into the glaze, letting the excess drip off.
Place glazed donuts on a rack to set for a few minutes before serving warm.
