This elegant twist on the classic French dessert infuses the rich caramel with warming notes of cinnamon, cardamom, and ginger. The aromatic spices perfectly complement the sweet, tender pears and buttery puff pastry, making it an ideal treat for cozy winter evenings.
Preheat your oven to 400°F (200°C).
In a small bowl, mix the cinnamon, ginger, cardamom, and cloves together.
Place a 10-inch oven-proof skillet (preferably cast iron) over medium heat. Sprinkle the sugar evenly over the bottom and let it melt without stirring until it turns a deep amber color (about 5-7 minutes).
Remove the skillet from heat immediately. Whisk in the butter, vanilla extract, and the spice mix until smooth (be careful, the caramel will bubble vigorously).
Arrange the pear halves carefully in the skillet, cut side up, packing them tightly together in a circular pattern.
Roll out the puff pastry slightly on a floured surface so it is just larger than the skillet.
Drape the pastry over the pears, carefully tucking the edges down inside the rim of the skillet to hug the fruit.
Cut a few small slits in the center of the pastry to allow steam to escape during baking.
Bake for 30-35 minutes, or until the pastry is puffed and golden brown.
Let the tart cool in the pan for exactly 10 minutes to allow the caramel to set slightly.
Place a serving platter upside down over the skillet and carefully but quickly flip them over to release the tart. Serve warm.
