
This easy ginger garlic prawn stir-fry is ready in just 25 minutes and makes for a healthy, vibrant weeknight dinner. Succulent prawns are tossed with crisp bell peppers, snap peas, and a savory, aromatic sauce.
In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, and the cornstarch slurry until smooth, then set aside.
Heat the vegetable oil in a large wok or skillet over high heat until it starts to shimmer.
Add the prawns to the hot pan and sear for 1 to 2 minutes per side until they turn pink and opaque, then immediately transfer them to a plate.
Reduce the heat to medium-high, add the grated ginger and minced garlic to the same pan, and stir-fry for 30 seconds until highly fragrant but not browned.
Toss in the sliced bell pepper, snap peas, and carrot matchsticks, cooking for about 3 minutes until they are tender-crisp.
