This healthy Lakra me Mish cabbage and meat stew is ready in 55 minutes and offers a light, comforting dinner. Using lean ground turkey and an abundance of sweet cabbage, this traditional Albanian-inspired dish is packed with nutrition without sacrificing rich savory flavor.
Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the chopped onion and garlic, sautéing for about 5 minutes until soft and translucent.
Add the lean ground turkey to the pot, breaking it up with a wooden spoon. Cook for 6 to 8 minutes until it is completely browned and no longer pink.
Stir in the sweet paprika, salt, and black pepper, coating the meat and onions thoroughly. Cook for 1 minute until the spices are fragrant and toasted.
Add the chopped cabbage, diced tomatoes with their juices, and chicken broth, stirring well to combine. Bring the liquid to a boil, then reduce the heat to low, cover, and simmer for 25 minutes until the cabbage is tender.
Remove the lid and simmer for an additional 5 minutes to let the juices concentrate slightly. Serve hot in deep bowls, garnished with a sprinkle of fresh chopped parsley.
