This easy savory garlic breadfruit in butter sauce is ready in just 35 minutes and makes a comforting, melt-in-your-mouth side dish. Tender, starchy breadfruit chunks are boiled and then tossed in a rich, garlic-infused butter sauce flecked with fresh herbs.
Place the prepared breadfruit chunks into a large pot and cover with water by about an inch. Add a pinch of salt and bring to a boil over high heat.
Reduce the heat to medium and let the breadfruit simmer for 15 to 20 minutes, or until the chunks are tender when pierced with a fork.
Drain the breadfruit thoroughly in a colander and set aside while you prepare the sauce.
In a large skillet, melt the unsalted butter over medium-low heat. Add the minced garlic and thyme sprig, cooking for about 1 to 2 minutes until the garlic is fragrant and translucent without letting it brown.
Pour the vegetable broth into the skillet with the butter and garlic, bringing the mixture to a gentle simmer for about 3 minutes to concentrate the flavors.
Add the drained breadfruit chunks to the skillet, tossing gently to coat them completely in the warm garlic butter sauce. Simmer for 3 to 4 minutes until the breadfruit absorbs the flavors and the sauce thickens into a glossy glaze.
Remove the pan from the heat, discard the thyme sprig, and season with salt, black pepper, and fresh chopped parsley before serving warm.
