In Eastern Europe, the autumn sausage-making season known as Koulenje is a beloved communal tradition. This comforting bake captures the rustic essence of that time by combining the dry-cured, paprika-spiced sausage with humble root vegetables. It is the perfect low-effort dinner to warm up a chilly evening.
Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish with a drizzle of olive oil.
In a large bowl, toss the sliced potatoes, yellow onions, and red bell peppers with the olive oil, sweet paprika, garlic powder, salt, and black pepper until everything is evenly coated.
Layer half of the seasoned potato and vegetable mixture into the bottom of the prepared baking dish in a relatively flat, even layer.
