
This smoky oven-roasted baingan bharta is ready in 45 minutes and delivers an authentic, easy-to-make Indian comfort food classic. Traditionally roasted over an open flame, this version uses a high-heat oven method that mimics that signature deep smoke flavor without the mess. Pair it with warm, buttery roti or naan for a cozy, satisfying vegetarian meal.
Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil. Poke the eggplants all over with a fork to prevent them from bursting, then brush them with one tablespoon of vegetable oil.
Roast the eggplants for 35 to 40 minutes, turning halfway through, until the skin is wrinkled and charred, and the flesh is completely collapsed and tender. Remove them from the oven and let them cool in a covered bowl for 10 minutes to steam, making the skins easy to peel.
Carefully peel away the charred skins and discard them, keeping as much of the smoky flesh as possible. Mash the eggplant flesh with a fork or potato masher until chunky but uniform, then set it aside.
Heat the remaining tablespoon of oil in a large skillet over medium heat. Add the chopped onion and sauté for 5 to 7 minutes until soft and translucent, but not completely browned.
Stir in the ginger-garlic paste and chopped serrano pepper, cooking for 1 minute until the raw aroma disappears. Add the chopped tomatoes, turmeric, Kashmiri red chili powder, and salt, cooking for 5 to 6 minutes until the tomatoes soften and the oil begins to separate from the mixture.
Add the mashed eggplant to the skillet and stir well to combine with the spiced tomato-onion base. Cook uncovered for 5 to 8 minutes, stirring frequently, to allow the flavors to meld and excess moisture to evaporate.
Stir in the garam masala and cook for 1 final minute, then turn off the heat. Garnish generously with fresh chopped cilantro and serve hot alongside warm flatbreads like roti or naan.
