Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper to prevent sticking.
In a large bowl, beat the softened butter, creamy peanut butter, granulated sugar, and light brown sugar together with a hand mixer on medium speed. Mix for 2 to 3 minutes until the mixture is light, fluffy, and pale yellow.
Add the egg and vanilla extract to the creamed butter mixture. Beat on medium speed for about 1 minute until the wet ingredients are completely smooth and combined.
