These soft, cake-like cookies are a beloved tradition in Newfoundland, featuring a rich molasses dough sandwiched with sweet strawberry jam. They are the perfect comforting treat for tea time, offering a chewy texture and a nostalgic flavor profile.
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
Add the molasses, egg, and vanilla extract to the bowl, beating until fully incorporated.
In a small cup, dissolve the baking soda in the warm water, then stir this mixture into the batter.
Gradually add the flour and salt to the wet ingredients, mixing until a soft, sticky dough forms.
Cover the dough and refrigerate for about 15 minutes to make it easier to handle.
On a generously floured surface, roll the dough out to approximately 1/4-inch thickness.
Cut the dough into circles using a round cookie cutter and place them on the prepared baking sheets.
Bake for 8-10 minutes; the cookies should be set but remain soft to the touch.
