These festive treats combine the classic chewy texture of a British flapjack with the warming spices and zesty fruitiness of a traditional Christmas pudding. Packed with dried cranberries, sultanas, and fresh orange zest, they offer a burst of holiday flavor in every bite without the heaviness of a full pudding.
Preheat your oven to 180°C (350°F) and line a 20cm (8-inch) square baking tin with parchment paper.
In a large saucepan, gently melt the butter, golden syrup, and light brown sugar over low heat until the sugar has dissolved and the mixture is smooth.
Remove the pan from the heat and stir in the mixed spice and fresh orange zest.
Add the porridge oats, dried cranberries, and sultanas to the saucepan, stirring thoroughly until all the dry ingredients are completely coated in the buttery syrup mixture.
Pour the mixture into the prepared baking tin and press it down firmly with the back of a spoon to create an even, compact layer.
Bake in the preheated oven for 20-25 minutes until the edges are golden brown. The center will still be soft but will firm up as it cools.
Allow the flapjack to cool completely in the tin before slicing into 8 bars or squares.
