These spicy Caribbean tamarind balls are ready in just 10 minutes of cook time for an easy, sweet, and fiery island treat. Infused with a kick of cayenne pepper and hot sauce, this recipe delivers the perfect balance of tangy and hot. They make a fantastic, bold snack to share with friends.
Prepare the tamarind pulp by stripping away the hard outer shells, sticky veins, and any loose fibers from the pods. Place the cleaned pulp into a medium mixing bowl, keeping the seeds intact as they help hold the shape.
In a small saucepan over low heat, combine 2 tablespoons of water, the Caribbean hot sauce, cayenne pepper, and salt. Simmer gently for about 10 minutes until the spices are fully dissolved and fragrant, creating a concentrated spicy syrup.
Pour the warm spicy syrup directly over the prepared tamarind pulp in the mixing bowl. Use a sturdy wooden spoon or clean hands to work the liquid into the sticky pulp until it softens slightly.
Gradually add 1.5 cups of granulated sugar to the tamarind mixture, kneading it thoroughly after each addition. Continue kneading until a stiff, cohesive, and slightly sticky dough forms and the sugar is mostly incorporated.
Place the remaining 0.5 cup of granulated sugar in a shallow bowl or plate. Pinch off small portions of the tamarind dough, about the size of a cherry, and roll them between your palms to form smooth, round balls.
Roll each tamarind ball in the shallow bowl of sugar until completely coated and sparkling. Place the finished spicy tamarind balls on a baking sheet lined with parchment paper and let them air-dry at room temperature for 1 hour before serving.
