This easy sweet and savory Banana den Forno is baked to perfection in just 20 minutes for a comforting Caribbean-style treat. Ripe bananas are coated in warm cinnamon butter and topped with melted Gouda cheese. Serve it warm as a unique dessert or a delightful side dish.
Preheat your oven to 375 degrees F (190 degrees C) and lightly grease an 8x8-inch baking dish with a small amount of butter.
Peel the ripe bananas and slice them in half lengthwise, then place them cut-side up in a single layer in the prepared baking dish.
In a small bowl, whisk together the melted butter, light brown sugar, ground cinnamon, ground nutmeg, and fresh lime juice until well combined.
Brush the butter mixture evenly over the banana halves, ensuring they are well coated to lock in moisture while baking.
Bake in the preheated oven for 15 minutes, or until the bananas are tender and the sugar mixture is bubbling and caramelized.
Remove the dish from the oven, sprinkle the shredded Gouda cheese evenly over the top of the bananas, and return to the oven for an additional 5 minutes until the cheese is completely melted and lightly golden.
Let cool for 5 minutes before serving warm, optionally garnished with a pinch of extra cinnamon or a scoop of vanilla ice cream.
