
This healthy Mediterranean pasta salad comes together in just 20 minutes and features a bright, zesty lemon herb dressing everyone will love. Filled with crisp cucumbers, juicy cherry tomatoes, and salty feta cheese, it makes the perfect quick lunch or summer potluck side dish.
Bring a large pot of salted water to a rolling boil over high heat, then add the penne pasta and cook according to package instructions for about 9 to 10 minutes until it is just al dente.
While the pasta cooks, prepare your dressing by whisking together the extra virgin olive oil, fresh lemon juice, lemon zest, dried oregano, and a pinch of salt and pepper in a small bowl until fully emulsified.
Chop your cherry tomatoes, cucumber, Kalamata olives, and red onion, then place them into a large mixing bowl and gently toss to combine.
