This authentic Egyptian Ful Medames recipe is a healthy, high-protein breakfast ready in just 25 minutes. Simmered fava beans are seasoned with zesty lemon, garlic, and cumin for a creamy and satisfying dish. Serve this traditional staple with warm pita bread and fresh vegetables for a complete meal.
In a medium saucepan or skillet, add the drained fava beans and water over medium heat.
Bring the mixture to a gentle simmer and cook for about 10 minutes until the beans are very tender and heated through.
While the beans are simmering, whisk together the olive oil, lemon juice, crushed garlic, cumin, salt, and black pepper in a small bowl until emulsified.
Once the beans are hot, use a potato masher or the back of a fork to mash about half of the beans directly in the pan to create a creamy texture.
Pour the dressing over the warm beans and stir gently to combine, letting it cook for another 2 minutes to meld flavors.
Transfer the Ful Medames to a serving bowl or deep platter.
Top generously with diced tomatoes, red onion, and chopped fresh parsley.
Drizzle with a little extra olive oil if desired and serve immediately with warm pita bread.
