These air fryer egg rolls deliver the classic takeout crunch without the heavy grease of deep frying. Packed with savory ground pork and tender cabbage, they come out golden brown and bubbly in just minutes.
Heat a skillet over medium-high heat. Add the ground pork and cook until browned, breaking it into small crumbles.
Add the coleslaw mix, green onions, garlic, and ginger to the skillet. Cook for 3-4 minutes until the vegetables are wilted and any excess moisture has evaporated.
Stir in the soy sauce, sesame oil, salt, and pepper. Remove from heat and let the filling cool for at least 10 minutes.
Lay an egg roll wrapper flat with a corner pointing toward you (diamond shape). Place about 2 tablespoons of filling in the center.
Fold the bottom corner up over the filling, fold in the left and right corners, then roll up tightly towards the top corner. Dab a little water on the top corner to seal the roll. Repeat with remaining ingredients.
Preheat your air fryer to 400°F (200°C).
Brush the egg rolls generously with vegetable oil or spray with cooking spray on all sides. This ensures they get crispy and blistered.
Place egg rolls in the air fryer basket in a single layer, leaving space between them. You may need to cook in batches.
Cook for 10-12 minutes, flipping them halfway through, until they are golden brown and crispy. Serve hot with your favorite dipping sauce.
