Heat the butter and olive oil in a large cast-iron skillet over medium-high heat until the butter is melted and foaming. Add the finely chopped onion and sauté for about 3 to 4 minutes until it becomes soft, fragrant, and translucent.
Add the diced pre-cooked potatoes and the chopped corned beef to the skillet. Use a spatula to stir everything together, ensuring the beef, potatoes, and onions are evenly distributed across the pan.
