This visually stunning variation of the classic Turkish pastry features paper-thin layers of phyllo dough wrapped around a savory filling of spinach and salty feta cheese. Rolled into a large spiral, it offers a perfect balance of crispy exterior and tender, cheesy interior.
Preheat your oven to 375°F (190°C) and grease a round 9-inch baking pan or pie dish.
In a medium bowl, mix the squeezed spinach, crumbled feta, ricotta cheese, and black pepper until combined. Set aside.
In a separate small bowl, whisk together the eggs, milk, and olive oil to create the wash.
Lay one sheet of phyllo dough on a clean surface and lightly brush it with the egg wash. Place a second sheet on top and brush again.
Spread a thin line of the spinach and feta mixture along the long edge of the phyllo stack.
Roll the dough into a long, tight log, enclosing the filling.
Take the log and coil it into a spiral shape in the center of the prepared baking pan.
Repeat the layering, filling, and rolling process with the remaining dough and filling, connecting each new log to the end of the previous one in the pan to expand the spiral outward.
Pour any remaining egg wash over the top of the entire spiral and sprinkle with sesame seeds.
Bake for 35-40 minutes, or until the borek is deep golden brown and crispy. Let it cool for 10 minutes before slicing.
