These pillowy flatbreads utilize Greek yogurt to create a tender texture without the need for yeast or long rising times. Finished with a brushing of rich garlic butter and fresh herbs, they are incredibly versatile and come together in under 30 minutes.
In a large mixing bowl, whisk together the flour, baking powder, and salt.
Add the Greek yogurt and mix with a spoon until a shaggy dough forms.
Turn the dough out onto a floured surface and knead gently for 2-3 minutes until smooth and elastic.
Divide the dough into 4 equal portions and roll each piece into a ball.
Using a rolling pin, roll each ball into a round disk approximately 1/4 inch thick.
Heat a griddle pan or cast-iron skillet over medium-high heat until very hot.
Place a flatbread on the hot griddle and cook for 2-3 minutes until it puffs up and develops dark char marks.
Flip the bread and cook for another 1-2 minutes on the other side.
While the bread cooks, combine the melted butter, minced garlic, and chopped parsley in a small bowl.
Remove the flatbreads from the heat and immediately brush them generously with the garlic-herb butter before serving.
