This healthy French omelette is ready in just 10 minutes and offers a light, protein-packed breakfast option. Whipped with fresh herbs and a touch of creamy goat cheese, it delivers gourmet flavor without the heavy butter. It is the perfect elegant morning meal that keeps you satisfied all day.
Whisk the egg whites, whole egg, water, sea salt, and black pepper together in a medium bowl until completely smooth and slightly frothy. Stir in the finely chopped chives and dill so they are evenly distributed throughout the mixture.
Heat the olive oil in an 8-inch non-stick skillet over medium-low heat until it flows easily across the pan. Tilt the pan to coat the bottom and sides completely to ensure the eggs do not stick.
Pour the egg mixture into the hot skillet and immediately begin agitating the pan back and forth while stirring the eggs constantly with a heat-resistant rubber spatula. Do this for about 1 to 2 minutes until soft, creamy curds begin to form but the eggs are still wet.
Stop stirring and use your spatula to smooth the egg mixture into an even layer across the pan, letting it cook undisturbed for 30 seconds to set the bottom. Sprinkle the crumbled goat cheese in a neat line down the center of the omelette.
Tilt the pan forward and use the spatula to gently fold the top edge of the omelette down over the cheese, then roll the entire omelette toward the opposite edge to form a smooth, cylinder shape. Slide the rolled omelette onto a warm plate, seam-side down, and garnish with a few extra fresh herbs before serving.
