This variation swaps the citrusy lemon and pungent sage for the warming sweetness of pure maple syrup and reduced apple cider. Fresh thyme adds a subtle earthiness that cuts through the rich glaze, making it a perfect centerpiece for a cozy family dinner.
Preheat your oven to 325°F (165°C). Place the ham cut-side down in a large roasting pan.
In a small saucepan, combine apple cider, maple syrup, Dijon mustard, butter, and half the thyme sprigs. Simmer over medium heat for 10-15 minutes until the mixture reduces and slightly thickens.
Brush the ham with about one-third of the glaze. Cover the pan tightly with aluminum foil to keep the moisture in.
Bake for 60 minutes. Remove the ham from the oven and discard the foil.
Increase the oven temperature to 375°F (190°C). Brush the ham generously with the remaining glaze and sprinkle with black pepper.
Roast uncovered for another 20-30 minutes, basting every 10 minutes, until the edges are caramelized and sticky.
Remove from the oven, garnish with the remaining fresh thyme sprigs, and let rest for 15 minutes before carving.
