In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
Add the Greek yogurt to the bowl and mix with a spoon or spatula until a shaggy dough begins to form.
Turn the dough out onto a generously floured surface and knead gently for 3 to 4 minutes until the dough is smooth and slightly elastic but still tacky.
Divide the dough into 4 equal portions and roll each portion into a ball.
Using a rolling pin, roll each ball out into a rustic circle or oval, roughly 1/4-inch thick.
