
This healthy Tuscan white bean soup is ready in just 30 minutes and features rich garlic, rosemary, and leafy kale. It delivers a cozy, Italian-inspired flavor using simple pantry staples. Drizzle with extra virgin olive oil and serve with crusty bread for the ultimate comfort meal.
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery, cooking until the vegetables begin to soften and the onions turn translucent, about 6 to 8 minutes.
Stir in the minced garlic and chopped rosemary, cooking for about 1 minute until fragrant. Be careful not to let the garlic brown or burn, as this will make the soup bitter.
Add the drained cannellini beans, vegetable broth, and the bay leaf to the pot. Stir well to combine all ingredients, then bring the mixture to a boil over medium-high heat.
Once boiling, reduce the heat to low and let the soup simmer uncovered for 10 minutes to allow the flavors to meld. Use the back of a wooden spoon to mash a small portion of the beans against the side of the pot to naturally thicken the broth.
