
This refreshing garlic mint cacik is ready in 25 minutes and makes a healthy, cooling Turkish cucumber soup. Infused with warm olive oil, toasted dried mint, and fresh cucumbers, it is the perfect side dish for grilled meats or warm pita bread.
Place the finely diced cucumbers in a colander, sprinkle with a pinch of salt, and let them drain for 10 minutes to remove excess moisture.
In a large serving bowl, whisk together the Greek yogurt, grated garlic, lemon juice, sea salt, and cold water until the mixture is completely smooth and creamy.
In a small skillet, heat the extra virgin olive oil over low heat for about 2 minutes. Stir in the dried mint and cook for 1 minute until the oil turns green and fragrant, then remove from heat immediately.
Squeeze any remaining liquid from the drained cucumbers with your hands, then stir them along with the fresh dill into the yogurt mixture.
Drizzle the warm mint-infused olive oil over the top of the cacik and stir gently to create beautiful green swirls. Chill in the refrigerator for at least 30 minutes before serving with warm flatbread.
