This holiday brie wrapped in prosciutto and brioche cooks in just 25 minutes and serves as the ultimate easy festive appetizer. Sweet fig jam and salty prosciutto contrast beautifully with the rich, melted cheese. It is all encased in a golden, buttery brioche crust that will impress any guest.
Preheat your oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper for easy cleanup.
Roll out the brioche dough on a lightly floured surface into a 10-inch circle that is about one-eighth inch thick.
Lay the slices of prosciutto in an overlapping star pattern in the center of the brioche dough circle.
Spread the fig jam evenly over the top of the cold Brie cheese round, then place the cheese jam-side down onto the center of the prosciutto.
Wrap the prosciutto slices tightly up and over the sides of the Brie to fully enclose the cheese and jam.
Fold the edges of the brioche dough up and over the prosciutto-wrapped Brie, pleating the excess dough to create a neat package, and pinch the seams tightly to seal.
Invert the wrapped Brie onto the prepared baking sheet so the smooth, pleated side is facing up.
Brush the top and sides of the brioche dough generously with the beaten egg wash and sprinkle the chopped fresh rosemary evenly over the top.
Bake in the preheated oven for 20 to 25 minutes, or until the brioche crust is puffed and a deep golden brown color.
Allow the baked Brie to rest for 10 minutes before slicing so the melted cheese doesn't immediately run out, then serve warm with crackers or fresh fruit.
