Make the dough by whisking the flour and salt together in a large bowl. Make a well in the center, add the egg, sour cream, and warm water, then stir with a fork until a shaggy dough forms.
Turn the dough onto a floured surface and knead for 5 to 7 minutes until it becomes smooth, soft, and elastic. Wrap the dough tightly in plastic wrap and let it rest at room temperature for 30 minutes to relax the gluten.
Prepare the filling by melting 2 tablespoons of butter in a skillet over medium heat. Add half of the chopped onion and all the mushrooms, sautéing for 5 minutes until soft and golden brown.
