This authentic-tasting variation brings the classic Spanish tapas bar experience to your kitchen using an air fryer for perfectly crispy potatoes with minimal oil. The dish is topped with a homemade smoky spicy tomato sauce and a cooling garlic aioli for the ultimate flavor contrast.
Preheat your air fryer to 400°F (200°C).
Pat the potato cubes completely dry with paper towels to ensure crispiness.
Toss the potatoes in a bowl with 1 tablespoon of olive oil and the salt until well coated.
Place potatoes in the air fryer basket in a single layer (cook in batches if necessary) and cook for 18-20 minutes, shaking the basket halfway through until golden and crispy.
