This refreshing beverage combines the tartness of fresh lemons with the floral sweetness of honey and an aromatic hint of rosemary. The addition of sparkling water makes it effervescent and perfect for hot summer afternoons or elegant dinner parties.
In a small saucepan, combine the still water, honey, and fresh rosemary sprigs.
Place the saucepan over medium heat and stir gently until the honey has completely dissolved into the water. Do not let the mixture boil vigorously.
Remove the pan from the heat and let the syrup steep for 15 to 20 minutes to allow the rosemary flavor to infuse.
Remove and discard the rosemary sprigs from the syrup. Let the syrup cool completely to room temperature.
In a large pitcher, combine the cooled rosemary honey syrup and the fresh lemon juice. Stir well to mix.
Just before serving, slowly pour in the chilled sparkling water and stir gently to combine without losing too much carbonation.
Fill serving glasses with ice cubes.
Pour the lemonade over the ice and garnish each glass with a fresh lemon slice before serving.
