In a small saucepan, combine the honey, regular still water, and sliced ginger over medium heat.
Bring the mixture to a gentle simmer, stirring occasionally until the honey has completely dissolved, about 3 to 5 minutes.
Remove the saucepan from the heat and immediately stir in the fresh mint leaves.
Let the syrup steep for at least 10 minutes to allow the ginger and mint flavors to infuse, then strain the syrup into a pitcher and discard the solids.
