This classic Szechuan dish, known as Hong You Chao Shou, features silky wontons filled with savory pork and ginger, bathed in a vibrant, aromatic sauce. The combination of spicy chili oil, tangy black vinegar, and garlic creates an addictive flavor profile that is perfect for a starter or a light meal.
In a mixing bowl, combine the ground pork, half of the green onions, grated ginger, 1 teaspoon of soy sauce, sesame oil, and cornstarch. Mix vigorously in one direction until the mixture becomes sticky.
Place a wonton wrapper in the palm of your hand. Place about 1 teaspoon of the pork filling in the center.
Moisten the edges of the wrapper with a little water. Fold the wrapper in half to form a rectangle, pressing the edges to seal out air.
Pull the two bottom corners of the rectangle together, dab a little water on one corner, and overlap them, pressing to seal. Repeat with remaining wrappers.
In a small bowl, whisk together the chili oil, black vinegar, minced garlic, sugar, and the remaining soy sauce to create the sauce.
Bring a large pot of water to a boil. Add the wontons and cook for 3-4 minutes, or until they float to the surface and the skins look translucent.
Drain the wontons well and transfer them to a serving bowl.
Pour the sauce over the hot wontons and gently toss to coat. Garnish with the remaining green onions before serving.
