These vibrant stacks feature tender, smoky grilled aubergine slices seasoned with aromatic za'atar spice. Layered with creamy hummus and sweet roasted red peppers, they make for a fantastic low-carb lunch or a stunning appetizer.
Preheat your outdoor grill or a stovetop grill pan over medium-high heat.
Brush the aubergine slices on both sides with olive oil and season generously with za'atar, salt, and black pepper.
Grill the aubergine slices for 4-5 minutes per side until they are tender and show distinct grill marks.
Remove the slices from the heat and allow them to cool slightly for about 2 minutes.
To assemble, place a slice of grilled aubergine on a plate, spread a generous spoonful of hummus on top, and add a few pieces of roasted red pepper.
Repeat the layering process to create stacks of 2 or 3 slices, finishing with a dollop of hummus on the very top.
Garnish the stacks with toasted pine nuts, fresh parsley, and a drizzle of pomegranate molasses before serving.
