This refreshing Vietnamese-inspired salad features tender pork marinated in aromatics and caramelized to perfection. Paired with crunchy vegetables, fresh herbs, and a zesty lime dressing, it offers a delightful balance of sweet, savory, and tangy flavors perfect for a light dinner.
In a mixing bowl, combine the thinly sliced pork with minced lemongrass, garlic, 2 tablespoons of fish sauce, brown sugar, and vegetable oil. Toss well to coat and let marinate for at least 15 minutes.
While the pork marinates, prepare the dressing. In a small bowl, whisk together the lime juice, the remaining 2 tablespoons of fish sauce, and 1 tablespoon of sugar (optional, for balance) until dissolved. Add sliced chili if you like heat.
Heat a large skillet or wok over medium-high heat. Once hot, add the marinated pork in a single layer. You may need to do this in two batches to ensure the meat sears rather than steams.
