This traditional South American-style savory pie, known locally as Torta de Fiambre, features a rich ham and melted cheese filling sandwiched between layers of fluffy, golden batter. It is incredibly easy to prepare using a blender and makes for a perfect quick lunch, dinner, or picnic snack.
Preheat your oven to 350°F (175°C) and generously grease a 9x13 inch baking dish.
In a blender, combine the eggs, vegetable oil, milk, flour, baking powder, salt, and pepper. Blend on high speed until the mixture is smooth and no lumps remain.
Pour approximately half of the batter into the prepared baking dish to create the bottom layer.
Evenly distribute the diced ham and cubed mozzarella cheese over the wet batter.
Pour the remaining batter over the filling, using a spatula to spread it gently so the filling is covered.
Sprinkle the top evenly with the grated parmesan cheese to create a golden crust.
Bake for 35 to 40 minutes, or until the top is golden brown and the center is set.
Remove from the oven and let it cool for at least 10 minutes before slicing into squares to serve.
