These traditional Fašírky are juicy fried meat patties staple in Czech and Slovak cuisine, offering the ultimate comfort food experience. The secret lies in the generous use of garlic and dried marjoram, combined with soaked bread rolls to keep the meat tender and flavorful inside a crispy breadcrumb coating.
Tear the stale bread rolls into small chunks and place them in a bowl. Pour the milk over them and let soak for 5-10 minutes until soft, then squeeze out the excess liquid.
In a large mixing bowl, combine the ground meat, squeezed bread, chopped onion, minced garlic, egg, dried marjoram, salt, and black pepper.
Mix the ingredients thoroughly with your hands until well combined and the mixture is sticky.
Shape the meat mixture into 8 oval-shaped patties, roughly 1 inch thick.
Place the dry breadcrumbs on a shallow plate and coat each patty evenly on all sides, pressing gently to adhere.
Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. Fry the patties for 4-5 minutes per side until deep golden brown and cooked through.
Transfer the fried Fašírky to a paper towel-lined plate to drain excess oil before serving warm with mashed potatoes.
