Preheat your oven to 375°F (190°C).
Unroll the pie crust and press it gently into a 9-inch pie dish or tart pan. Crimp the edges if desired.
Place the crust in the refrigerator to chill while you prepare the filling.
In a skillet over medium heat, cook the chopped bacon until crispy. Add the diced onion during the last 2 minutes of cooking to soften. Drain on paper towels.
Scatter the cooked bacon, onions, and shredded Gruyère cheese evenly over the bottom of the chilled pie crust.
In a medium bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined and slightly frothy.
