Transform cooked turkey into a vibrant Vietnamese-inspired sandwich featuring a sticky honey-soy glaze. The richness of the meat is cut perfectly by crunchy quick-pickled carrots and a creamy, spicy sriracha mayonnaise.
In a small bowl, whisk together the rice vinegar, sugar, and a pinch of salt. Add the julienned carrots and toss to coat; let them sit for at least 10 minutes to quick-pickle.
In a separate small bowl, mix the mayonnaise and sriracha until smooth. Set aside.
Heat a skillet over medium heat. Whisk together the soy sauce and honey, then add the cooked turkey to the pan along with the sauce. Toss gently for 2-3 minutes until the turkey is warm and coated in the glaze.
Slice the baguettes lengthwise and toast them lightly if desired. Spread the spicy mayonnaise generously on the inside of each roll.
Layer the glazed turkey onto the bottom half of the bread.
Top with the pickled carrots (drained), cucumber slices, jalapeño slices, and a generous handful of fresh cilantro.
Close the sandwich and serve immediately while the bread is crusty.
