This vibrant one-pan meal combines the richness of salmon with the sweet, anise-like flavor of roasted fennel and juicy burst cherry tomatoes. It is a simple, healthy, and elegant dinner that comes together effortlessly on a single baking sheet.
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Place the sliced fennel and cherry tomatoes on the baking sheet. Drizzle with 2 tablespoons of olive oil, add the minced garlic and oregano, and season with salt and pepper. Toss well to coat.
Spread the vegetables out in an even layer and roast for 10-12 minutes until the fennel begins to soften.
Remove the baking sheet from the oven and push the vegetables slightly to the sides to make room for the salmon fillets.
Place the salmon fillets in the center of the tray. Brush them with the remaining 1 tablespoon of olive oil and season generously with salt and pepper.
Arrange the lemon slices on top of the salmon fillets or scatter them among the vegetables.
Return the tray to the oven and bake for another 12-15 minutes, or until the salmon is opaque and flakes easily with a fork.
Remove from the oven, garnish with fresh herbs, and serve immediately.
