This rich and savory twist on classic yaki udon combines the earthy depth of browned mushrooms with a velvety miso-butter sauce. It is an incredibly fast comfort food dish that maximizes umami flavors without requiring complex stocks or long simmering times.
Prepare the udon noodles according to the package instructions (usually boiling for 1 minute), then drain and set aside.
In a small bowl, whisk together the white miso paste, soy sauce, and mirin until smooth to create the sauce base.
Heat a large skillet or wok over medium-high heat and melt 1 tablespoon of butter.
Add the sliced mushrooms to the pan and sauté for 5 minutes until they are browned and tender.
Stir in the minced garlic and scallion whites, cooking for 1 minute until fragrant.
Add the drained noodles and the miso sauce mixture to the pan. Toss vigorously for 2-3 minutes to coat the noodles and caramelize the sauce slightly.
