This fast-paced stir-fry features caramelized ground beef infused with garlic, chilies, and the distinct aroma of basil. It is a beloved street food classic known as Pad Kra Pao, perfect for a quick weeknight dinner served over jasmine rice and topped with a crispy fried egg.
In a small bowl, whisk together the oyster sauce, soy sauce, fish sauce, dark soy sauce, and sugar until the sugar dissolves. Set aside.
Heat the vegetable oil in a wok or large skillet over medium-high heat. If serving with eggs, crack them into the hot oil and fry until the edges are crispy and the whites are set. Remove eggs and set aside.
In the remaining oil, add the minced garlic and sliced chilies. Stir-fry for about 20 seconds until fragrant, being careful not to burn the garlic.
Add the ground beef to the pan. Break up the meat with a spatula and cook for 3-4 minutes until it is fully browned and starting to crisp up at the edges.
Pour the prepared sauce mixture over the beef. Toss everything together and cook for another minute to let the flavors absorb.
Turn off the heat completely. Immediately add the basil leaves and toss until they are just wilted from the residual heat.
Serve immediately over steamed jasmine rice, topped with the crispy fried egg.
