These succulent lamb chops are marinated in a vibrant blend of fresh ginger and chillies, then seared and coated in a sticky, sweet-and-savory glaze. The Thai-inspired flavors of lime and soy sauce cut through the richness of the meat perfectly, making for an impressive yet quick dinner.
Pat the lamb chops dry with paper towels to ensure a good sear.
In a small bowl, whisk together the grated ginger, minced garlic, soy sauce, honey, fish sauce, lime juice, and half of the sliced chillies.
Pour half of this sauce mixture over the lamb chops and let them sit for 10 minutes while you heat the pan. Reserve the rest of the sauce for glazing.
Heat the vegetable oil in a large skillet or frying pan over medium-high heat.
Place the chops in the hot pan and sear for 3-4 minutes on each side until browned and cooked to your desired doneness (medium-rare is recommended).
Lower the heat to medium and pour the reserved sauce into the pan around the chops.
Simmer for 1-2 minutes, turning the chops once, until the sauce bubbles and thickens into a sticky glaze that clings to the meat.
Remove from heat immediately to prevent burning the honey.
Transfer to a serving platter and garnish with the remaining fresh chillies and cilantro before serving.
