This hearty breakfast puts a traditional spin on the morning meal by replacing toast with crispy, savory Irish potato pancakes known as Boxty. Loaded with a mix of grated and mashed potatoes, these pancakes serve as the perfect base for savory sausages, crisp bacon, and a sunny-side-up egg.
Place the grated raw potatoes in a clean kitchen towel and twist tightly to squeeze out as much liquid as possible. Discard the liquid.
In a large mixing bowl, combine the squeezed grated potatoes, cooked mashed potatoes, and flour.
Stir in the baking soda, salt, and pepper. Gradually add the buttermilk, mixing until a thick batter forms.
While the batter rests, cook the sausages and bacon in a large skillet over medium heat until browned and crispy. Remove from pan and keep warm.
In the same skillet (or a clean one), melt a tablespoon of butter over medium heat.
Drop large spoonfuls of the potato batter into the pan, flattening them slightly to form pancakes about 4 inches wide.
Fry for 3-4 minutes on each side until golden brown and crispy. Repeat with remaining batter.
In a separate non-stick pan, fry the eggs sunny-side up or to your preference.
To serve, place two boxty pancakes on a plate, top with sausages and bacon, and crown with a fried egg. Garnish with fresh chives.
