Inspired by the bustling streets of Mumbai, this savory breakfast dish combines fluffy eggs with spicy vegetables and toasted bread in a unique sandwich style. It is a hearty, flavor-packed meal that transforms simple pantry staples into a delicious start to the day.
Crack the eggs into a large mixing bowl and whisk until frothy.
Add the chopped onion, tomato, green chili, cilantro, turmeric powder, red chili powder, and salt to the eggs. Whisk well to combine.
Heat a large non-stick frying pan or skillet over medium heat and melt 1 tablespoon of butter.
Pour half of the egg mixture into the pan, spreading it out to form a thin, round omelette.
Immediately place two slices of bread side-by-side into the wet egg mixture.
Quickly flip the bread slices over so both sides are coated in egg, then place them back down in the center of the pan.
Let the eggs cook for about 2 minutes until the bottom is set and lightly browned.
Carefully flip the entire omelette with the bread attached over to cook the other side.
Fold the overhanging edges of the omelette inward over the bread slices to create a neat parcel.
Fold one slice of bread over the other to form a sandwich. Press down gently and cook for another minute until the bread is crispy.
Repeat the process with the remaining butter, egg mixture, and bread. Serve hot.
