In a mixing bowl, crack the eggs and whisk them until frothy.
Add the chopped onion, tomato, green chilies, cilantro, turmeric powder, red chili powder, and salt to the eggs. Whisk well to combine.
Heat a non-stick frying pan over medium heat and melt 1 tablespoon of butter.
Pour half of the egg mixture into the pan, spreading it out to form a thin circular omelette.
Quickly place two slices of bread into the wet egg mixture, then immediately flip the bread slices over so both sides are coated in the egg.
Cook for about 2 minutes until the bottom of the omelette is set and golden brown.
Carefully flip the entire omelette with the bread slices attached. Cook the other side for another minute to toast the bread.
Fold the overhanging edges of the omelette over the bread slices, then fold one slice of bread over the other to form a sandwich.
