These vibrant burgers combine juicy chicken breasts seasoned with oregano and lemon with salty, squeaky halloumi cheese. Topped with cool tzatziki and fresh vegetables, this meal brings the flavors of the Mediterranean to your table in under 30 minutes.
Place the chicken fillets between two sheets of parchment paper and pound them to an even thickness (about 1/2 inch) for quick cooking.
Season the chicken on both sides with dried oregano, salt, black pepper, and a drizzle of olive oil.
Heat a large non-stick skillet over medium-high heat. Cook the chicken fillets for 4-5 minutes per side until golden brown and cooked through. Remove from the pan and set aside to rest.
Wipe the pan clean or use a separate pan over medium heat. Add the halloumi slices and cook for 2-3 minutes on each side until golden and crispy.
While the cheese cooks, lightly toast the cut sides of the brioche buns.
To assemble, spread a generous layer of tzatziki on the bottom buns. Top with arugula, a cooked chicken fillet, two slices of fried halloumi, tomato, and red onion.
Place the top bun on and serve immediately while warm.
