These juicy lamb burgers are infused with aromatic spices like cumin and coriander, bringing the classic flavors of kofta to a bun. Paired with a creamy whipped feta sauce and crisp veggies, they make for a sophisticated yet simple weeknight meal.
In a large mixing bowl, combine the ground lamb, grated onion, minced garlic, cumin, coriander, cinnamon, chopped parsley, 1 teaspoon of salt, and a pinch of black pepper.
Gently mix the ingredients with your hands until just combined. Be careful not to overwork the meat to keep the burgers tender.
Divide the meat mixture into 4 equal portions. Shape them into patties slightly larger than your buns, pressing a small indentation into the center of each to prevent them from puffing up while cooking.
In a separate small bowl, mash the feta cheese and Greek yogurt together with a fork until you achieve a creamy, spreadable consistency.
Preheat a grill or large skillet over medium-high heat. Lightly oil the cooking surface.
Cook the lamb patties for about 4 to 5 minutes per side, or until they reach an internal temperature of 160°F (71°C) and develop a nice crust.
While the patties rest for a few minutes, lightly toast the brioche buns on the grill or in the pan.
