These vibrant burgers combine juicy chicken breasts marinated in lemon and oregano with squeaky, salty halloumi cheese. Topped with a refreshing homemade tzatziki and crisp veggies, they bring the taste of the Mediterranean to your table in under 30 minutes.
In a small bowl, whisk together olive oil, lemon juice, lemon zest, oregano, minced garlic, salt, and pepper to create a marinade.
Coat the chicken cutlets in the marinade and let them sit for 5-10 minutes while you prepare the sauce.
To make the tzatziki, mix the Greek yogurt, squeezed cucumber, and fresh dill in a small bowl; season with a pinch of salt.
Heat a large skillet or grill pan over medium-high heat.
Cook the chicken cutlets for 4-5 minutes per side until golden brown and cooked through (internal temperature of 165°F). Remove and set aside.
In the same pan, add the halloumi slices and cook for 1-2 minutes on each side until golden and crispy.
