These vibrant burgers bring the flavors of Greece to your table in under 30 minutes. Succulent chicken breasts are seasoned with lemon and oregano, then paired with salty, golden-fried halloumi cheese and cool tzatziki for the perfect texture contrast.
Place the chicken cutlets in a bowl and coat with olive oil, dried oregano, lemon zest, half the lemon juice, a pinch of salt, and black pepper.
Heat a large non-stick frying pan over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through. Remove from the pan and set aside to rest.
Wipe out the pan if necessary and return to medium heat. Add the halloumi slices and cook for 1-2 minutes on each side until golden and crispy.
While the cheese cooks, lightly toast the cut sides of the brioche buns under a broiler or in a toaster.
To assemble, spread a generous layer of tzatziki on the bottom buns. Top with salad leaves, tomato slices, a piece of chicken, and two slices of fried halloumi.
Squeeze the remaining lemon juice over the halloumi and place the bun lids on top. Serve immediately.
